I love food! Who doesn’t? I’m also a big snacker! Thankfully we’ve come a long way from greasy chips and fat filled twinkies. Snack food can be good for you and taste good! Kansas City Folk Festival 2016

Last weekend the Westin Crown Center was transformed into a knee-slapping, song-belting, square-dancing, guitar-strumming music festival. To be exact, Folk Alliance International presented the annual Kansas City Folk Festival. If you happened to be there you got a giant serving of folk music from Kansas City and around the world.

Folk Alliance International (formerly the North American Folk Music and Dance Alliance) is the non-profit organization based locally that sponsors the Kansas City Folk Festival. Folk Alliance International has a mission to nurture, engage, and empower the international folk music community. Amateur and professional artists alike have access to education, advocacy, and performances.

Since moving the conference in 2014, the Kansas City Folk Festival has been an industry focal point for folk music and dance in Kansas City. As the largest folk music conference in North America, members include record companies, publishers, music support services, and artists that work in the industry.

Andara the Band

During Friday night’s Folk Festival events Lily and I found ourselves at Crown Center searching for a suitable place for dinner. Actually we were looking for anything Lily wouldn’t balk at the idea of eating. Panera? No. Spin Pizza? No. (What?!? Lily, you love Spin Pizza!) Three Little Pigs? No. She finally decided on Fritz’s. Once our bellies were full we continued our wandering around.

I remembered the Arvin Gottlieb Planetarium was featuring laser light shows set to Beatles’ music. At just $6 per ticket that was going to be our plan. We walked towards The Link to Union Station but stopped at the stairway leading down to the Brasserie. From there we spent the rest of the evening following our ears.

Welcoming Krokstrom Klubb & Market to the Neighborhood

Before dining at Krokstrom Klubb & Market, the only Scandinavian cuisine I had experienced came from Kansas City’s annual Ethnic Enrichment Festival. Last year I tried meatballs in potato bread with a lingonberry sauce. It was delicious.

Owners and couple Chef Katee McLean and Josh Rogers promised their new restaurant will transport you to Scandinavia. From the curtains in the front windows to the artwork in the restrooms, and of course the food, they make good on that promise. Actually the entire restaurant including the name Krokstrom Klubb & Market is a tribute to Chef McLean’s Scandinavian ancestry.

Fika Sweet Plate – house made cookies which traditionally go with tea and coffee. McLean’s assortment of treats included walnut crescents, lingonberry thumbprints, almond cookies, petite meringues, and molasses chews.

Noteworthy Dishes

The house specialty is the Smörgåsbord. A variety of cheese, fish and cured meats are served with knäckebröd, housemade pickles and sauces.

Glögg – A Nordic mulled wine: made with red wine, sugar, cinnamon, cardamom, ginger, star anise, cloves, and bitter orange, and finished with a vodka, akvavit, or brandy.

Lavender Beets – ruby roasted beets with lavender infused goat cheese, orange, greens, and beet cured gravlax.

Swedish Meatballs with Ale Cream – house perfected meatballs made by combining beef and pork with nutmeg and mustard served with potato, lingonberry sauce and cucumber salad.

Mussels with Apple Dijon Cream – fennel and onions cooked in a flavorful broth of IPA, apple cider, Dijon mustard and cream.

Akvavit Chicken Thighs – roasted chicken thighs in garlic, lemon and thyme on top of a creamy akvavit sauce with mushrooms.

The More You Know…

Scandinavian food has a limited existence in Kansas City so I feel the need to give a little education on the cuisine. This was a learning lesson for me too.

Scandinavians descended from the Vikings and still eat many of their traditional dishes today. Fish, pork, poultry, beets, potatoes, cucumbers, dill, parsley, horseradish, and apples are all staples of a Scandinavian diet. Oysters, mussels, mutton, cheese, cabbage, onions, berries and nuts are also often found in Scandinavian recipes.

When asked why, aside from her ancestry, open a Scandinavian restaurant in Kansas City, McLean replied, “It’s about time. Wouldn’t you agree?” Yes, I do.

Good Vibes

Fika (fee-ka) is a concept in Swedish culture that basically means “to have coffee.” However, Fika isn’t just a coffee break; it’s a moment to slow down and appreciate the good things in life. More than the plate of baked sweets, this is the atmosphere in Krokstrom Klubb & Market. Even in the midst of working out the kinks during the weekend soft opening everyone was relaxed and joyful. Chef Kate McLean and Josh Rogers are both very friendly and approachable. Those vibes have been picked up by the staff who also made our Valentine’s dinner a most enjoyable one.
